El Zabroso’s owner, Mr. Jonathan A. Cantiller, has always wanted to offer Capiznons a taste of Italian cuisine by serving authentic Italian pizza and pasta. This gradually became a reality when he decided to take a risk and build a small kiosk at Gaisano Marketplace in Roxas City, Capiz.
Mr. Cantiller works round-the-clock in preparing fresh ingredients and fresh dough for his clients. He and his wife were also hands-on in managing all aspects of the business which includes inventory, sales, and operation. Soon enough, El Zabroso was able to move into a larger stall within the same mall because of the public’s acceptance and support and the owner’s ongoing dedication to serving high-quality food.
Over the years, the firm was able to expand its market to different provinces in Western Visayas. Presently, it has a total of 5 branches – Roxas City and Pontevedra in Capiz, Kalibo and Boracay Island in Aklan, and San Jose in Antique. With this demand, their production has not changed since it started which results in their struggle to meet their customers’ demand.
With the aim to improve El Zabroso’s products, process, and system, a Memorandum of Agreement (MOA) between the resto and the Department of Science and Technology Regional Office VI (DOST VI) was signed. Improving overall business operations with the support from DOST VI entails adopting science and technology (S&T)-related interventions, specifically, to improve product quality in terms of physical structure, appearance, and freshness of products and avoid product rejects which may cause customer dissatisfaction, mechanize manual processes and increase production output to cater to customer demand and be able to widen market reach.
